Tasty & Healthy Chicken Wraps

There is nothing that brings out the “domestic goddess” in all of us, like a quick and easy meal that is also healthy for the family!  But beware, it has also been my personal experience that this meal may bring in many of the neighborhood friends too!

With that in mind, I am going to share one of my family’s favorite tasty meal sensations:  Tasty & Healthy Chicken Wraps!  Make them and enjoy….but do not blame me if the neighborhood shows up to gobble them down every time you do!

Ingredients: (Amounts listed per individual wrap)

  • 1-La Tortilla Factory High-Fiber, Fat-Free Tortillas- They are versatile, delicious and high in fiber.
  • 2 Strips of Perdue Low Fat Chicken Breast Tenderloins- They are delicious, pre-cooked, healthy and low fat (only 2.5 grams of fat and 140 calories per serving). They're located in the pre-packaged meat area of your local foodstore, and are not frozen.  Just heat them up until they are a little crispy in a non-stick skillet with Pam, or other non-stick spray.
  • 3/4 cup shredded lettuce- You can do it yourself or buy the already shredded lettuce in the food store. I use Fresh Express Shreds.
  • 1/8 cup of reduced-fat, finely shredded cheese blend- I use the Sargento Pizza cheese. It has part skim mozzarella and cheddar and is only 3 grams of fat for a 1/8 cup.
  • Sprinkle with Konriko Brand Mojo seasoning- It contains salt, garlic, lime & orange juice, onion, cumin, salt and pepper. Or if you do not have Mojo, just sprinkle with salt and pepper.
  • Other optional goodies to add are sliced pepperoncini peppers (for a little zing!), or fresh roma tomatoes.
  • Aluminum foil to wrap it in and prevent fillings from falling out all over. Of course, this means less mess left behind to clean up. I like that!

Preparation:

  • Heat chicken in non-stick skillet, lightly spraying both sides with butter flavored Pam or other non-stick spray.
  • Heat tortillas in a non-stick skillet, lightly spraying both sides with butter flavored Pam or other non-stick spray.
  • Place a roughly 14-inch length of aluminum foil on a plate and lay the heated tortilla on the dish.
  • Cut up 2 chicken tenders onto each tortilla, and top with shredded lettuce and cheese.
  • Sprinkle with mojo seasoning, add optional sliced pepperoncini (these are the Greek salad peppers and are wonderful sliced on sandwiches-my personal favorite!), or roma tomatoes.
  • Fold and wrap-up the sandwich...then eat up!


    ***For another little kitchen tip: I have a pair of large kitchen scissors I use only for cooking. I use them to cut the chicken and pepperoncini peppers……and many other things!
    Of course, you must take great care to be sure they are cleaned properly, and label them so that the children do not use them for their school projects etc.
